Wesley Foundation Meal- Sunday, Feb.22nd
We will be meeting the Monday before this date, but I thought we might as well get this organized now. Being the Sunday before Mardi Gras, perhaps we can put together a simply themed meal. I know there are some pretty easy chicken-gumbo recipes out there that we could put in crockpots. Maybe add some French bread, butter and cheese, some salads and dessert? Green, purple and gold napkins or decor would be cute too. Just comment to this post and let me know what you're willing to bring if you can. Thanks! The Wesley Students really appreciate this!

Jambalaya
2 tsp olive oil
2 boneless, skinless chicken breasts, cubed
10+ oz kielbasa sausage, sliced
½ onion, diced
1 green pepper, diced
2 stalks celery, chopped
3-4 large carrots, sliced
2 cloves garlic, chopped
¼ tsp cayenne pepper
½ tsp onion powder
1 tsp salt
1 tsp pepper
2 C rice, uncooked
4 C (1 carton) chicken broth
2 tsp Worcestershire sauce
1 tsp hot pepper sauce
Heat oil in large pot over medium heat. Saute chicken & sausage about 5 minutes until light brown. Throw in onion, pepper, celery, carrots, & garlic. Season with cayenne pepper, onion powder, salt & pepper. Cook 5 more minutes. Add rice and stir in broth. Bring to a boil. Cover and simmer 20 minutes or until rice is tender. Stir in Worcestershire and hot pepper sauce.
So... what do you all think? We could maybe have 2 people contribute food/money per meal of Karen's posted Jambalaya recipe... how many do you think we should do.. 2? 3?
